Pumpkin Chocolate Chip Muffins
Ingredients:
3/4 c. sugar
1 1/2 c. flour
3/4 t. baking powder
1/2 t. baking soda
1 t. pumpkin pie spice
1/4 t. salt
1/4 c. oil
2 eggs
1/4 c. water
3/4 c. canned pumpkin (1/2 of a 15 oz. can)
1/2 c. chocolate chips
Directions:
Preheat oven to 400. Grease 12 medium muffin tins or 6 jumbo tins. Mix all ingredients with hand mixer. Bake for 20-25 minutes (a little longer for jumbo muffins.)
(I like to double the recipe, thus using the whole can of pumpkin AND ensuring that our house is full of these beauties for days on end. Because believe me, they don't last long.)
(I had fully intended to bake these things today, but imagine my disappointment upon learning that I am out of baking soda. Who runs out of baking soda??! So you'll have to wait for pictorial evidence of just how stinkin' good these things are until I'm able to pick up some baking soda.)

We are out of baking soda too! I ran out a while ago, but I'm not much of a baker so I usually forget till I am in the mood to do something. Those sound yummy. I might make some this weekend. Nick won't eat them, but maybe the kids will like them. You should make them next time you have breakfast for moms group!

Okay I finally made these! My 7 year old buddy helped me but he didn't like them!
However, his father did :)
I liked them, but would def. prefer them without the choc. chips (I know I'm not normal)
